In the past eating fish was always considered to be a good thing. However, lately we hear a lot of controversial information about the benefits of eating fish, types of fish we should be consuming, etc. The non-fatty types of fish such as sole, cod, trout, pollack, bass, flounder and tilapia to name a few are low fat, high protein food choices that are suitable for most types of diets. Moderate in salt and cholesterol, fish is rich in amino acids, potassium and iron and an excellent replacement for red meat if you are concerned about heart disease, cholesterol or high blood pressure. I personally like any fish as long as it is wild. I buy it frozen over any fresh farmed raised fish. This week purchase was made at Costco - Wild frozen Cod fillet.
Defrost fish before cooking. Preheat the oven to 400 Degrees.
Wash fish fillet, pat it dry with a papper towel and place in a oven prof baking dish. At first we use our pomegranate glaze (from Trader Joe's) as a marinate. Brush fish fillets with it and sprinkle with olive oil and leave in the refgegirator for half an hour to one hour.
Once ready to cook it take it out from the refrigerator brush with glaze one more time sprinkle with sea salt and fresh grinded black pepper and place in the oven middle rack for 20 minutes.
Put it under the broiler for the last few minutes.
